Monster Cookies

Neno - make a batch of Monster Cookies before you start out.
This will fill you up - along with a stop at the Dairy Queen...:lol:

Monster Cookie Recipe
 
6 cups     Smooth Peanut Butter
2 cups     Butter or margarine, softened
6 cups     Brown sugar, packed
4 cups     Granulated sugar
12            Eggs
1 tbsp     Vanilla
1 tbsp     Corn Syrup
 
18 cups    Rolled oats
8 tsp         Baking soda
2 cups      Semi Sweet chocolate chips
2 cups      Candy coated chocolate bits, such as Smarties or M&M's
 
In mixing bowl, cream peanut butter, butter, brown and granulated sugar together.  Beat in eggs, 2 at a time.  Mix in vanilla and syrup.  Transfer to extra large container.
 
Mix in remaining ingredients.  Drop by ice cream scoop on to greased pan.  Flatten with hand.  May be dropped by teaspoonfuls for a smaller cookie.  Bake at 350 F (180 C) oven for 10 to 12 minutes for large cookies and 7 to 8 minutes for small.  Overbaking makes them hard.  Makes 5 dozen, 3 inch cookies, or 1 dozen 5 inch cookies.

Oh, so sorry to hear that. I hope you eat well and look after yourself.

My dad was diabetic too and mom was always trying different recipes.  But nowdays

there is alot of choices for diabetic cook books.
