Summer Pudding is an old-fashioned English dessert that I imagine was originally invented to use up leftover bread and over-the-hill berries.  It can be a pretty bland concoction, so I decided to update it by adding framboise (raspberry) liqueur to the berries and using brioche or egg bread instead of traditional white bread. The good news is that you actually have to make this ahead, so it’s ready whenever you want to serve dessert.  And a dollop of rum whipped cream on top makes everything taste better, right?
