Place potatoes in an oven–proof roasting pan or baking sheet, drizzle with oil and 1 tsp salt, toss with hands to coat . Roast potatoes in 450 degree oven until tender when poked with a fork, 25-35 minutes. Halfway through the roasting, take pan out, cover potatoes with 2-4 tbsp NVB, shake pan to coat, and return to oven to finish. You can coat the potatoes with the spices before intitially putting them into the oven, but sometimes they burn this way and it's better to do half way through.
Also works with oil: House Blend, Olio Santo, or Garlic oil.
