    A hot cast-iron fry pan cooks broccolini in a flash and gives it a lightly charred flavor. Red pepper flakes add a spicy kick to this dish, which is delicious alongside grilled or roasted meats.

    Ingredients:


    • 4 tsp. olive oil
    • 1 lb. broccolini, stems peeled and spears halved lengthwise
    • Kosher salt, to taste
    • 2 minced garlic cloves
    • Pinch of red pepper flakes

    This pairs well with crisp, full-bodied white wines from our Wine Club.

    Directions:

    In a small cast-iron fry pan over medium-high heat, warm 2 tsp. of the olive oil until almost smoking. Add half of the broccolini and cook, stirring occasionally, until lightly charred and crisp-tender, 3 to 4 minutes. Season with salt and transfer to a plate.

    Warm the remaining 2 tsp. olive oil in the pan and cook the remaining broccolini. Season with salt, add the garlic and red pepper flakes and cook, stirring constantly, for 1 minute. Return the first batch of broccolini to the pan and toss to rewarm, about 30 seconds. Serve immediately. Serves 4.
