    Pine nuts lend a sweet, rich flavor to this green bean dish. The seeds of pine trees, the nuts are nestled in the scales of the trees' cones. Because the nuts have a high fat content, they go rancid quickly, so be sure to store them in the refrigerator.

    Ingredients:


    • 8 oz. pancetta, cut into 1/4-inch pieces
    • 3 shallots, thinly sliced
    • 2 lb. green beans, trimmed and blanched until
        almost tender
    • 1/2 cup toasted pine nuts
    • Salt and freshly ground pepper, to taste

    Wine Pairing

    This pairs well with crisp, medium-bodied white wines like the Spottswoode Sauvignon Blanc, Napa County/Sonoma County from our Wine Club.

    Directions:

    In an oval roaster over medium heat, cook the pancetta until browned and crispy, about 8 minutes. Using a slotted spoon, transfer the pancetta to a paper towel-lined plate. Set aside.

    Return the pan to medium heat. Add the shallots and cook, stirring occasionally, until tender, about 5 minutes. Add the green beans and cook, stirring often, until tender, 3 to 5 minutes. Stir in the pancetta and pine nuts, and season with salt and pepper.

    Transfer the beans to a warmed platter and serve immediately. Serves 8 to 10.
