    A refreshing drink popular in Mexico, the paloma is often made with grapefruit soda, but here we’ve used freshly squeezed grapefruit juice instead.


    Ingredients:


    • Coarse sea salt for the glass
    • 1 lime wedge
    • 1 1/2 oz. (45 ml) white tequila
    • 3 oz. (90 ml) fresh grapefruit juice
    • 2 oz. (60 ml) sparkling water
    • 1 thin slice grapefruit

    Directions:

    Spread the salt on a small plate. Moisten the rim of a double old-fashioned glass with the lime wedge, invert the glass onto the plate, then shake off any excess salt. Fill the glass with ice.

    In a cocktail shaker filled with ice, combine the tequila and grapefruit juice. Shake vigorously for 15 seconds, then strain into the prepared glass. Top with the sparkling water and stir gently to combine. Garnish with the grapefruit slice and serve immediately. Makes 1 drink.
