Our exclusive pumpkin brownie mix makes preparing these autumnal treats a snap. Baking them in our brownie bites pan produces 20 lightly crunchy sweet treats that are perfect for packing into lunches, but you can bake the brownies in a standard 8-inch (20-cm) square pan as well.

    • 3

    Ingredients:

    • 1 package pumpkin brownie mix (includes brownie mix and pumpkin swirl packets)
    • 8 Tbs. (1 stick) (4 oz./125 g) unsalted butter, melted and cooled
    • 2 eggs
    • 4 Tbs. (2 fl. oz./60 ml) warm water

    Directions:

Preheat an oven to 350°F (180°C). Spray the wells of a brownie bite pan with nonstick cooking spray.

In a bowl, stir together the brownie mix packet, half of the melted butter, 1 of the eggs and 1 Tbs. of the water until well blended. In another bowl, stir together the pumpkin swirl packet with the remaining melted butter, 1 egg and 3 Tbs. water until well blended.

Divide the brownie batter evenly among the wells of the prepared brownie bite pan. Using a spoon, place a dollop of the pumpkin swirl batter on top of the brownie batter, dividing it evenly among the wells.

Bake until a toothpick inserted into the center of a brownie bite comes out clean, 10 to 15 minutes. Transfer the pan to a wire rack and let cool completely before serving. Makes 20 brownie bites.
