    Made from grated cheese, these crispy little bites, known as fricos in Italian, are delicious as an appetizer, served with sparking wine. Or use them to garnish savory dishes, such as our Sweet Pea Risotto with Prosciutto.

    Ingredients:


    • 2 cups coarsely grated Parmigiano-Reggiano
       cheese
    • 1 tsp. freshly ground pepper

    Directions:

    Preheat an oven to 350°F. Line a baking sheet with a Silpat liner.

    For each frico, spoon about 2 Tbs. of the cheese onto the prepared baking sheet and spread into a 3-inch round. Space the rounds about 2 inches apart. Sprinkle the tops of the rounds with pepper.

    Bake until the fricos are crisp and golden, about 12 minutes. Transfer the baking sheet to a wire rack and let cool completely. Using a spatula, remove the fricos from the baking sheet. Makes about 16.
