    [size=16]A customer at Barefoot Contessa once asked me, “How do you get the guacamole green?” I secretly wondered what color her guacamole was?! Then I realized that hers had probably turned brown! I have three tricks to keeping guacamole bright green until I’m ready to serve it.  First, I use ripe Hass avocadoes, which are the avocadoes that are bumpy and brown when ripe.   Second, as soon as I dice the avocadoes, I toss them in freshly squeezed lemon juice.  And third, since air turns guacamole brown, I refrigerate it in a bowl with a plastic wrap pressed directly on the surface to keep the air out.  Delicious fresh Guacamole that’s so easy to make and happily, is also bright green! All you need is some friends, a pitcher of margaritas, salty corn chips, and you have a party![/size]
