    Mâche is a delicate salad green favored throughout Europe, including Italy. It has a slightly nutty flavor that is complemented by walnut oil. Look for a first-pressed walnut oil; after it is opened, store it in the refrigerator and use within six months. This salad makes a wonderful addition to an antipasto platter.

    Ingredients:


    • 4 to 5 cups mâche
    • 3 Tbs. walnut oil
    • 2 tsp. balsamic vinegar
    • 1/2 tsp. fine sea salt
    • 1/4 tsp. freshly ground white pepper

    Directions:

    Leave the small florets of mâche intact and separate the larger ones.

    In the bottom of a salad bowl, using a fork, gently mix together the walnut oil, vinegar, salt and white pepper. Add the mâche but do not toss. Just before serving, gently toss to coat the mâche with the vinaigrette. Serve immediately. Serves 6.
